Just-opened SIX SENSES ROME is a conversion of the 18th century Palazzo Salviati Cesi Mellini on Via Del Corso. The 95-room beauty’s main restaurants are BIVIUM Restaurant-Café-Bar – see the fourth century tiles beneath its glass floor – or the rooftop NOTOS. Besides the Roman Empire-inspired five-course tasting menu, dishes include plant-based, meat, fish, and sweet classics with Sicilian touches.
