A new luxury winery hotel on Australia’s Mornington Peninsula

The first luxury Jackalope hotel opens April 1st, 2017, at Merricks North, an hour from Melbourne.  Designed by Carr Design, the two-floor building holds 46 rooms, and starting overnight prices are A$650. Hotel GM Tracy Atherton was with Aman for many years before doing Hotel Hotel in Canberra.  Food is by Guy Stanaway, formerly of Noosa’s Bistro C: expect contemporary finer food in Doot Doot Doot and more casual fare in Rare Hare, which also has an all-purpose boutique. Jackalope is the legendary giant horned jackrabbit, and in the surrounding Willow Creek vineyards there is a 22-foot tall sculpture of this animal, by Melburnian Emily Floyd.  The vineyard and the hotel are owned by 28-year old Louis Li, from Kunming.
