Simply Sunday. Good food does not have to be filling, and it does NOT have to come from a celebrity chef. The luxury hotel that is Conrad Tokyo started out with a blaze of Gordon Ramsay publicity. Who is he, you might well ask? He is a former Scottish soccer player turned celebrity chef whose byline is bad language. Why on earth anyone thought he would do well in Tokyo is beyond the gal.
Anyway, the restaurant that he ran is fortunately no more. In its place is Collage, which has already seen the absolutely brilliant and passionate chef Shinya Maeda get a Michelin star. This guy lives and breathes the restaurant, checking every dish as it goes out from the open kitchen. I asked for a green salad, and look what I got. It is sheer beauty – and jolly good for the waist line. Luxury travel tip, go minimalist Michelin , and feel good about yourself.
