The Philippines – Hecker on food – Aman

The Farm at San Benito, two hours’ drive from Manila, is not only justly lauded throughout The Philippines but also far and wide in Asia. See the image above. The Farm now claims what is said to be the most comprehensive Detox Programme in the continent, covering not only cleansing of the mind and body but also psychoemotional clearing as well. (Girlahead saus ignorissima sum, what IS that?). Apparently a two-night retreat to optimum health includes Immune Support, Holistic Detox Cleanse, Holistic Wellness, Sleep Induction, Pain Management and, most important at this time, Mental Health.

Interestingly, that programme, above, omits the importance of food.  Girlahead spoke to long-time friend Gerhard Hecker, currently in Mauritius with LUX* Island Resort. What is wrong with hotels’ food offerings, Gerhard? Well, concepts  are mainly decided by a corporate team and sometimes themes are a choice of owners who would usually not be coming from a food beverage background. There is often not enough or no market research, and one hotel ‘F&B Director’ oversees many restaurants and bars. By contrast, successful restaurant groups do invest in research, with highly qualified management teams for each venue. Also, successful restaurants today are not all about the food and beverages. It is more about entertainment value  – the overall experience. Customer care and individual address is as vital as it ever was in the past (guests love to be recognized and know that their preferences are noted).
